Diabetic Jelly Cookies
How often do you hear about “healthy cookies”? Well, this is a type of nutritious goodie some diabetics might love. Using sugar-free jelly and flaxseed as the main ingredients, these jelly cookies are unlikely to give you a sugar rush. Plus, flaxseed contains a lot of fiber, omega-3 fatty acids and antioxidants, which tends to result in positive effects on cholesterol levels, blood glucose and your overall health. You can pamper your palate without jeopardizing your blood sugar. Doesn’t that sound like an ideal dessert?
Ingredients you’ll need for this recipe: 1 cup unbleached all-purpose flour, 2 pkts. sucralose (Splenda), 1 tsp. vanilla extract, 1 egg, 2 tbsps. roasted whole flaxseed, ½ cup fat-free margarine and approximately ¼ cup sugar-free jelly of your choice
Follow the instructions in the video and your yummy cookies will be ready in about 20 minutes. Every oven is slightly different, thus the baking time may vary a little bit. To be safe, check your cookies after about 10 minutes. These tiny goodies get cooked pretty fast!
